Sausage Beet Hash
This is 100% the ultimate dish for tired, weary witches, and it’s perfect for when you need something easy to make but delicious to recharge from a long day.
To be completely fair with you, I’ve never been the biggest fan of beets! Their vibrant color is definitely stunning, but I have never been too invited by that strong, earthy flavor that they tend to carry. So I created this straightforward recipe for all of you who, like me, don’t enjoy this vegetable.
You might be wondering: “Why are you even bothering with beets in the first place? If you don’t like them you don’t have to eat them”, and yes, fair enough, but the answer lies in their countless health benefits, especially during our menstrual phase. They’re packed with nutrients that can do wonders for our bodies and well-being at this point of our cycle.

INGREDIENTS (for 2 witches)
2 red beets
1 lb of pork sausage (I used hot Italian sausage from Sprouts, but feel free to use any pork sausage that you prefer)
4 oz of spinach
3 spring onions
Olive oil
Salt
Pepper
1/2 tsp of paprika
1/2 tsp of garlic powder
PROCEDURE
Step 1: Preheat the oven at 400°.
Step 2: Wash the beets thoroughly to remove any dirt. Wrap them individually in foil with a little olive oil (about 1 tsp each) and salt, then roast in the oven for about 1 hr until they're tender but not mushy. You can pierce them with a fork to check: it will slide in with a little resistance, but it won’t break apart. Let them cool slightly once done.
Step 3: When it’s about 15 minutes to when the beets will be ready, chop the spring onions. In a skillet, heat some olive oil and sauté the spring onions for 2-3 minutes, until they start to become translucent. Add the pork sausage, breaking it apart with a spatula. Sprinkle in paprika and garlic powder for flavor (and depending on what type of sausage you’re using, you can feel free to add any seasoning you might like, such as chipotle powder, herbs mixes or anything else you can think of). Cook until the sausage is about 90% done.
Step 4: Once they’re ready and out of the oven, slice or chop the beets (peel if necessary) and add them to the skillet. Mix them with the sausage so they absorb all the juicy pork flavors. It’s going to take 2-3 minutes.
Step 5: Add fresh spinach to the skillet and stir until it wilts. Adjust the seasoning if needed.
Step 6: Plate the mixture with a dollop of Greek yogurt or crumbled goat cheese, or serve it over wild rice for a complete meal. Enjoy!
